Learning to Mill

It's been a while since I've jumped on here and shared. I am hoping to be better about it now that our daughter has gotten a little older and I am slowly coming out of the baby fog!

About a year ago my sister in law purchased a mill and starting making her own flour. She has been making all sorts of delicious things since she started and her journey has been so inspiring to watch. I decided that learning to mill was something I would like to do so I asked my husband for a mill for Christmas.

I got the NutriMill Harvest Mill in gold and it is beautiful to have out on the counter. I have been learning so much about the health benefits of milling your own flour and highly recommend taking a deep dive into that yourself. I had no idea that even the "healthier" flours on the shelf lacked so many nutrients.

It's been a learning curve but absolutely worth it. I purchased Hard Red Wheatberries, Hard White Wheatberries and Soft White Wheatberries - I got 25 lbs of each and I store them in food safe containers with special gamma seals that help to keep them fresh. It will last forever!! I have had to find new recipes that use freshly milled flour and have also had to learn how to adjust the mill in order to make the flour the right texture. I am still learning every time I use it!

I have really enjoyed several freshly milled flour resources such as Generation Acres Farm and Grains in Small Places. I highly recommend their recipes - all of the ones I've tried have been hits.

I have been using this Vegan Sandwich bread recipe and its delicious!! We fly through the loaves!

This pancake recipe has been a win over here, too

I have never made bagels before - even with regular flour - so it was fun to learn the process with milled flour!! I thought they turned out delicious. I will definitely be trying this bagel recipe again!

I am looking forward to continuing to learn more and more about baking with milled flour and if you have any recipes you've found and loved, please share!
