Seeing our garden take off this summer has been very exciting - I am brand new to gardening so it is just thrilling to watch the entire process. I direct seeded several things into our garden boxes back in April so we're just now seeing the fruits of some of that labor.
My romaine has truly taken off - it looks amazing. I have started to pull pieces of it off in the mornings and use it for salads in the evenings. It blows my mind it started with such a tiny little seed.
One of our favorite summer salads is grilled chicken with strawberries and balsamic vinagarette. My husband will grill a few pieces of chicken then I cut it up and place it on a bed of romaine. I top it with feta cheese, sliced strawberries and sugared nuts. I love the honey balsamic dressing by Ken's dressing for the top. Delicious!!
