Spinach Tortellini Soup & Homemade Italian Bread

Spinach Tortellini Soup is my favorite soup from Joanna Gaines. It literally takes me back to my Granny's kitchen with the flavors. You can find it in her second cookbook. Its very easy to make and absolutely delicious!! 

Ingredients 

1 tablespoon of butter

1/2 medium onion, diced

1 tablespoon of minced garlic

6 cups of chicken broth

1 14.6 ounce can of diced fire roasted tomatoes

1/2 teaspoon of Italian seasoning 

1 9 ounce package of cheese tortellini 

1 14.5 ounce can of cannellini beans, rinsed well and drained

6 cups baby spinach

2 tablespoons chopped fresh parsley (or 1 teaspoon of dry in jar)

2 tablespoons chopped fresh basil (or 1 teaspoon of dry in jar)

1 cup of shaved parmesan cheese

Directions

*In a large pot, melt the butter over medium heat and add the onion and garlic. Saute, stirring constantly, for about 4 minutes

*Add the broth, tomatoes, and Italian seasoning and bring to a rolling boil. Add the tortellini and beans and cook for a few minutes until tortellini is cooked through

*Reduce the heat to medium and add the spinach, parsley, and basil. Once the spinach wilts you can squeeze a lemon over the top (I haven't ever used the lemon)

*Ladle into bowls and top with parmesan cheese, salt & pepper

Ingredients
  • 1 1/2 cups warm water
  • 1 tablespoon of honey
  • 1 tablespoon of active dry yeast
  • 1 1/2 teaspoon salt
  • 3 1/2 - 4 1/2 cups all purpose flour
Instructions 
*Combine water, honey and yeast in mixing bowl and let it sit until the top is foamy (if it doesn't foam, don't move forward)
*Add flour and salt
*Using dough hook mix in flour until dough is not sticky to the touch (you'll add a little more flour at this point if it's still sticky)
*Scoop dough out of bowl and onto baking sheet or baking stone, forming into a longish loaf
*Cover loaf with a clean towel and let sit for about 20 minutes while you preheat oven to 400 degrees
*Using sharp knife, cut slits in top of loaf
*Bake at 400 for 18-20 minutes or until golden brow
*Finish by brushing the top of loaf with butter before slicing
